If you are a biryani lover and want to try something different, this Chicken Barbeque Biryani is a must-try! It combines the smoky flavor of BBQ chicken with traditional biryani spices, making it incredibly delicious and unique.

I personally love making this recipe at home for family dinners because it tastes just like restaurant-style biryani but is much more budget-friendly and easy to prepare.

📝 Ingredients

For Chicken Marination:

800 grams chicken

Salt to taste

3 tablespoons ginger garlic paste

2 tablespoons lemon juice

1 teaspoon turmeric powder

2 tablespoons red chili powder

1 teaspoon chopped red chilies

3 tablespoons yogurt

1 tablespoon garam masala powder

1 tablespoon cumin powder

1 tablespoon coriander powder

½ teaspoon black pepper powder

3 tablespoons cooking oil

For Rice:

2 cups rice

Water as required

Salt to taste

2–3 tablespoons oil

For Biryani Masala:

3 tablespoons cooking oil

1 tablespoon ginger garlic paste

6 tomatoes (pureed)

1 tablespoon red chili powder

½ tablespoon cumin powder

½ tablespoon coriander powder

½ tablespoon garam masala powder

½ teaspoon yellow food color

🍲 Step-by-Step Instructions

1. Marinate the Chicken

In a large bowl, add chicken along with salt, ginger garlic paste, lemon juice, turmeric powder, red chili powder, chopped chilies, yogurt, and all spices.

Mix everything well so the chicken is fully coated. Cover and refrigerate for at least 1 hour.

💡 Tip: For best flavor, marinate overnight.

2. Soak and Boil the Rice

Wash the rice and soak it for 15–20 minutes.

Boil water in a pot, add salt and a little oil, then add the rice. Cook until the rice is 70–80% done (do not fully cook).

3. Prepare the BBQ Chicken

Grill or cook the marinated chicken on a pan until it gets a slightly charred (smoky) texture.

This step gives the biryani its signature BBQ flavor 🔥

4. Prepare the Masala

Heat oil in a pot and add ginger garlic paste. Cook for a few seconds, then add tomato puree.

Now add:

Salt

Red chili powder

Cumin powder

Coriander powder

Garam masala

Cook for 2–3 minutes until the oil starts to separate.

5. Add Chicken to Masala

Add the prepared BBQ chicken into the masala and cook for 8–10 minutes so the flavors blend well.

6. Layer the Biryani

In a large pot:

Add a layer of chicken masala

Add a layer of rice

Sprinkle a little garam masala or garnish

Repeat the layers if needed.

7. Final Dum (Steam Cooking)

Add yellow food color on top. Cover the pot tightly and cook on low heat for 8–10 minutes.

🌿 Tips for Best Results

Do not overcook the chicken

Keep rice slightly undercooked before layering

Do not skip the BBQ step

Always cook on low flame during dum
