Step-by-Step Method
Step 1 – Prepare the Yakhni (Stock)
The base of this biryani is the flavorful yakhni, which gives it a rich and aromatic taste.
First, wash the meat thoroughly and place it in a large pot. Add about 4 glasses of water. Now grind the onions and add them into the pot along with ginger paste and garlic paste.
Next, prepare a spice pouch (potli). Take a clean muslin cloth and add coriander seeds, fennel seeds, nutmeg, mace, star anise, and the whole garlic bulb inside it. Tie it tightly so that the spices remain inside but release their flavor into the stock.
Add this potli into the meat mixture. Then add salt, black pepper, cloves, cumin, cinnamon sticks, and bay leaves. Mix everything well and let it cook on medium heat until the meat becomes tender.
Once the meat is fully cooked, add cooking oil and start bhunai (frying process). This step is very important because it enhances the flavor of the meat.
Now add beaten yogurt, green chilies, and chopped ginger. Cook until the oil starts separating.
Take out the spice potli and dip it in a small amount of clean water. Squeeze it well to extract all the flavors and add this liquid back into the yakhni. This step ensures that no flavor is wasted.
Turn off the flame. Your rich and aromatic yakhni is now ready.
Step 2 – Cook the Rice
In another large pot, bring water to a boil. Add salt according to taste.
Now add soaked basmati rice and cook until it is about 60% done. The rice should be slightly firm because it will cook further during the dum process.
Once done, drain the rice and set it aside.
Step 3 – Layering the Biryani
Layering is the heart of a perfect biryani.
Take a large heavy-bottomed pot. Start by spreading a layer of rice at the bottom. Then add a layer of yakhni with meat.
Repeat this process 2 to 3 times. Make sure the final layer on top is rice. This helps in even cooking and gives the biryani its classic look.
Step 4 – Dum Preparation
To enhance the aroma, prepare the dum mixture.
Grind small cardamom and sugar into a fine powder. Mix it with milk, saffron color, and a few drops of kewra essence.
Now pour this mixture evenly over the top layer of rice. Finally, add ghee on top. This will give your biryani a rich and traditional flavor.
Step 5 – Dum Cooking
Cover the pot tightly with a lid. You can also seal it with dough to trap the steam.
First, cook on high flame for 10 minutes. Then reduce the heat to very low and cook for another 10 minutes.
After that, turn off the flame and let the biryani rest for 10 minutes. This resting time allows all the flavors to blend perfectly.
